  • 2 eggs (or one egg and 2 egg whites)
  • ¼ cup olive oil
  • ½ cup raw honey
  • ¼ cup unsweetened applesauce
  • 1 cup mashed, cooked pumpkin
  • 1½ brown rice flour
  • ½ cup soy flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • dash salt
  • ½ cup raisins (optional)
  • ½ cup chopped nuts

  1. Preheat oven to 350 °F.
  2. Beat eggs well; add honey, oil and pumpkin.
  3. Add dry ingredients and mix well.
  4. Stir in raisins and nuts.
  5. Fill paper-lined or greased muffin cups ⅔ full.
  6. Bake at 350 °F degrees for 20 minutes.
  7. Rotate tins once to brown evenly.
  8. Add whipped cream (if you want)
